an achromatic color of any lightness between the extremes of black and white
This was a test question in one of my college lit classes. Both are correct and acceptable. However, gray is the standard for American English, while grey is more common in England, and usually the form used for people's last names.

From a designer's perspective, Gray is generally used to specify the color i.e. "The cement is gray". Grey, on the other hand, is used more as an adjective i.e. "Look at his grey sweater."

Either way, they both work fine so it's really up to you.

"The cement is gray" is using 'gray' as an adjective also, so I'm not sure if your usage example is relevant.

Designer people don't use 'gray' or 'grey' anyway -- they use #7c7c7c!!
